Organic search refers to the results returned from a search engine that are obtained through natural discovery by the search engine rather than through their paid advertising service. For example, in the screen shot below, the section in blue is referred to as the organic search results for 'boats for sale'.
In order to attract new customers, website owners are most concerned with how high in the search results their site appears. Over 90% of sites listed on the first page of the search results are visited, nearly 10% make up the next two pages and almost 0% after the third page - so having a page listed after the third page is almost as bad as not having a website at all!

Search engines rank results using their own proprietary scoring system which, in essence, looks at how well specific keywords match up to your content and how many other known websites are linking to your content. From this, the search engines determine how much of an authority you are on the subject and the quality of your site and rank you accordingly. (see also Search Engine Optimization).
